And squash is loaded with nourishing vitamins and minerals…it’s especially high in potassium, Vitamin A, and fiber. A cup of butternut squash has more potassium than a banana! What’s not to love!!

For a Health Coach Approved variation: omit the sugar, use light coconut milk, sub low sodium broth for the 1-2 C. milk!
I bake so sparingly but you gotta enjoy life too and, for bread, this recipe is about as healthy as it gets! To make it less sugary I would use just 1/3 C. pure maple syrup or brown sugar (omit the rest!).
